Easy Christmas Fudge


Well, it feels like Christmas here in Tokyo. 
Waking up to frost on the ground and a warm heated carpet under our feet. 
Our house is filled with Christmas festivities to welcome friends over for hot apple cider and American Christmas cookies. And of course, one of our favorite Christmas treats...

A friend was asking for this recipe the other day, so here it is! My mom has made this for years and I've tweaked it since it is difficult to get German Chocolate Bars here. Instead I increased the butter and added baking coca. This recipe is really easy and makes tons of fudge. Although it disappears surprisingly fast. Enjoy!
Fudge
300 g. Butter (1  1/2 cup - 3 sticks)
4 cups of Sugar (800 g.)
1 cup of milk (220 ml)
25 American Marshmallows (or 50 Japanese size Marshmallows)
1 1/2 cups of Unsweetened Baking Cocoa (135 g.)
510 g. of Chocolate Chips (18 oz.)
about 1 cup of chopped Walnuts

(If using German Chocolate Bar, omit Baking Cocoa and degrease Butter to 200 g./1 cup)


Melt butter in a big saucepan. Add sugar and stir on medium heat. Add milk and cocoa until barely hot. Add marshmallows. Bring to a boil stirring constantly. Boil 3 minutes. Add chocolate chips and turn off heat. Stir until chips have melted. Quickly pour into a big buttered cookie sheet with edges (I use a pan about 30 cm x40 cm or you can use 2 - 9x13 pans). It will thicken right away so quickly sprinkle with chopped walnuts and gently press them into the fudge. (This way you can make some fudge without nuts if need be.)
