Easy BBQ Ribs

One of the things we are enjoying while here in the U.S. is eatting meat (especially Tim and the boys..."Driscoll men eat meat!" I am told). In Japan we eat mostly chicken and hamburger (1/2 pork and 1/2 beef) and fish (although I don't really know how to cook it -so let me know if you have any good ideas). It's nice to have afordable thick beef, ham, sausages and ribs while here in the States. The easiest way I have found to cook ribs is in my crockpot. Usually you think of using your crockpot in the winter, but I like it in the summer too so I don't have to turn on the oven when it is so hot. We just got a nice big crockpot (we had out grown our little one- Boy, can our boys eat!) and we hope to take it back to Japan (since I haven't found crockpots in the stores there). Just salt and pepper the meat and put it in the crockpot. We fill ours full to the top with meat then cook on high for about 7 hours. (Althought I've cooked them for about 10+ hours on low as well - if you "overcook" them , they just get more tender and shredded, so that's not too bad - Less meat and a smaller crockpot would take less time I am sure) I also rotate the meat about 1/2 way through since it's really packed in there.

The last hour or so, when the meat looks done, drain the juice and put 1/2 to a whole bottle of BBQ sauce. We like all the leftovers too on sandwhiches or in tortillas (something else we can't get in Japan). If you try it, let me know how it goes. Enjoy!
